With its regional cultural tradition of this region, people of Bikaner celebrate Kite Flying festival with traditional flavor. Generally it is celebrated in April/May, date relying on Hindu calendar. Even with sand-storms and slightly hot weather, people celebrate this festival with zeal and vigor. Varying colors, shapes and sizes of kites, fly in sky and sky remains full of kites. People of all ages join this momentous fest.

People prepare special dish of the day-'Khichari' and 'Imlani'. 'Khichari' is local dish, prepared by half-broken rice, whole Moong Dal (a pulse) and Ghee boiled in salted water. 'Imlani' is sweet & sour tamarind water sprinkled by powder mixture of Jeera (cumin seed), Pudina (mint leaves) and Ilaichi (cardamom)." Interestingly, this festive food is quite like a patient's diet that suites all kinds of people very nutritiously and this is easy to digest, nutritious and palatable too. 'Imlani' is not only mouth-watering but also an instant energy provider. Indeed this is a vibrant and unique way of celebrating the festival, only of Bikaner.
